Roasted Winter Squash

Ingredients

  • 13 Kabocha, Delicata, Turban squash, peeled, deseeded and cut into 1” chunks
  • 3 tablespoons olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Toss prepared squash in bowl with olive oil, salt and pepper until coated.
  3. Spread evenly on cooking sheet keeping the spacing quite generous.
  4. Roast for 10 minutes. Flip the squash and roast another 5 – 10 minutes or until easily pierced with a fork. Turn off the oven and leave squash in place until needed for recipe or until ready to serve.
