Huevos Benedictos

A perfect brunch includes a benedict in some form or another.

Ingredients

  • toasted English muffins or crispy hash browns
  • slightly wilted spinach or fresh arugula
  • a slice of ripe tomato
  • crispy vegan chorizo (homemade or store bought (Field Roast Mexican Sausage or Upton’s Naturals Chorizo Seitan))
  • sliced avocados
  • black beans
  • corn
  • thinly sliced red onions and / or thinly sliced red peppers (all optional but fun)
  • salsa
  • fresh cilantro, chives and deseeded jalapeno slices garnishes

Instructions

  1. Toast two English muffins or fry up crispy hash browns.
  2. Add slightly wilted spinach or fresh arugula, a slice of ripe tomato, crispy vegan chorizo, and sliced avocados. Sprinkle on some black beans, corn, thinly sliced red onions and / or thinly sliced red peppers.
  3. Blend and heat hollandaise sauce.
  4. Top with sauce and salsa. Garnish with fresh cilantro, chives and deseeded jalapeno slices.
