Huevos Benedictos
A perfect brunch includes a benedict in some form or another.

Ingredients
- toasted English muffins or crispy hash browns
- slightly wilted spinach or fresh arugula
- a slice of ripe tomato
- crispy vegan chorizo (homemade or store bought (Field Roast Mexican Sausage or Upton’s Naturals Chorizo Seitan))
- sliced avocados
- black beans
- corn
- thinly sliced red onions and / or thinly sliced red peppers (all optional but fun)
- salsa
- fresh cilantro, chives and deseeded jalapeno slices garnishes
Instructions
- Toast two English muffins or fry up crispy hash browns.
- Add slightly wilted spinach or fresh arugula, a slice of ripe tomato, crispy vegan chorizo, and sliced avocados. Sprinkle on some black beans, corn, thinly sliced red onions and / or thinly sliced red peppers.
- Blend and heat hollandaise sauce.
- Top with sauce and salsa. Garnish with fresh cilantro, chives and deseeded jalapeno slices.
