- 2 heads romaine lettuce, washed and carefully dried, large leaves torn into smaller pieces, smaller leaves left intact
Ideas for salad additions
- 1 cup cherry tomatoes (per serving) cut in half
- 1/2 cucumber (per serving) sliced or diced
- 1 or 2 radishes (per serving) cut into matchsticks
- 1/2 avocado (per serving) diced
- 1 or 2 slices of red onion (per serving)
- 1/4 cup grated carrots (per serving)
Ideas for toppings
- 1 tablespoon toasted pine nuts
- Croutons
- Toasted sesame seeds
- Toasted hemp hearts
- Roasted Chickpea Croutons
- Coconut bacon
Instructions
- Toss lettuce with generous amount of salad dressing and place on place.
- Top with 3 or 4 salad additions (not too many or it will become a chop salad).
- Drizzle more dressing over salad additions, as needed.
- Garnish with one or two toppings.
- Season with salt and pepper.
