Ideas for salad additions

  • 1 cup cherry tomatoes (per serving) cut in half
  • 1/2 cucumber (per serving) sliced or diced
  • 1 or 2 radishes (per serving) cut into matchsticks
  • 1/2 avocado (per serving) diced
  • 1 or 2 slices of red onion (per serving)
  • 1/4 cup grated carrots (per serving)

Ideas for toppings

  • 1 tablespoon toasted pine nuts
  • Croutons
  • Toasted sesame seeds
  • Toasted hemp hearts
  • Roasted Chickpea Croutons
  • Coconut bacon

Instructions

  • Toss lettuce with generous amount of salad dressing and place on place.
  • Top with 3 or 4 salad additions (not too many or it will become a chop salad).
  • Drizzle more dressing over salad additions, as needed.
  • Garnish with one or two toppings.
  • Season with salt and pepper.

Notes

  • This is a great make-ahead recipe for weekday lunches.
