Green Goddess Dressing

Easy and delicious! Miso is the secret to this wholly satisfying dressing – it provides a depth of umami that makes the other ingredients sing. A nice balance of herb and tang.

Ingredients

Scale
  • 1/2 cup just mayo
  • 1/3 cup unsweetened soy milk
  • 1 tsp apple cider vinegar
  • 1/4 cup chopped fresh chives
  • 1/4 cup coarsely chopped flat-leaf parsley
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon fresh lemon juice
  • 2 tsp white miso
  • 1 chopped garlic clove until smooth
  • 1/8 tsp. lactic acid (optional)
  • kosher salt
  • freshly ground black pepper

Instructions

  1. In a processor, or using an immersion blender, purée just mayo, soy milk, apple cider vinegar, chives, parsley, tarragon, lemon juice, miso, and garlic until smooth.
  2. Season with salt and pepper.

Notes

Can be made 2 hours ahead. Cover and chill.
