Almond Butter and Cacao Bombs

I usually double the recipe. They are that good. I like to eat two of these before I work out – nice burst of energy without the volume of a smoothy or a bowl of cereal.

Ingredients

  • 6 large dates, pitted
  • 1/3 cup roasted peanuts
  • 2 heaped tablespoons smooth almond (or peanut) butter
  • 1 1/2 tablespoons quick cook oats
  • 2 teaspoons cacao powder
  • 1 generous pinch of sea salt

Instructions

  1. Place the dates in a food processor and pulse until they form a smooth paste.
  2. Add the oats, almond butter, cacao powder, peanuts, and sea salt and pulse again until really well combined.
  3. Using a tablespoon, scoop and press the mixture, then roll into a ball. Continue forming these bombs until you run out of mixture.
  4. Place the rolled balls into the fridge for around 1 hour before serving. Store in an airtight container in the fridge.

Notes

  • Try adding sesame seeds, ground hemp seeds, or ground flax for more protein.
  • For more superfood adaptogenic goodness, add a tablespoon of maca powder.
  • Swap out the peanuts with walnuts for more omega-3 fats
